Well...It's Syrup...

Darn trees are just not cooperating as of yet, but I expect they will soon, and I will not be able to keep up...

Finished off a gallon and a half last evening, but my tank is now bone dry, and looks so sad at being so empty...

Just a tip for anyone that makes syrup and has trouble when canning, or does not want to spend $500+ on a canning unit...Think Coffee Urn...Find a big old stainless (aluminum will wrok too) coffee urn at a lawn sale or GoodWill...Filter your syrup right into the urn and it will keep it hot enough for canning it...I have an old 72 cup that will hold just over 3 gallons of syrup for canning...

Sure hope it kicks in and stays in for a little, we got it all in one shot, now finally getting a 2nd run.
If we don't get any more than the 80 gallon's I'm looking at now, I'm gonna cry!

I hear ya...I am sick of hearing about how much other people have made (not really...just feel like bit%$ing)...

Some dude on a Maple bulletin board I go to swear that a friend of his showed him tests of his sap and it was coming in over 5% sugar...

That would be 17.2 gallons sap/gallon of syrup...
I have a HARD time swallowing that one...Best I have done is 3.25%, and highest I ever saw was just shy of 4%...

I've got the opposite problem. Warm weather came so fast the flow has slowed. Has not been below freezing for 6 nights now. I had only a short run so far with only 2 gals of syrup so far. I hope we get back to normal weather soon.

Was wondering how you were doing with the sap collection. Being so close and yet so far from you it's hard to tell what the conditions are up there. Cooled down here the last few days, still well above freezing though. The nights are in the 20s, must be good for the sap flow around here I would think. Good luck and above all have fun. Freezing rain here right now.

Everyone I have talked to within 20 miles is in the same boat...Ground still has too much frost in it...This rain should loosen it up some...We'll see...

It will come...just when is the question...

Still a bit of snow on the ground here in places. And it's a muddy mess where it's bare ground. Needs to dry up so I can get out and get those fall leaf clean ups done! Have about 15 houses I couldn't get to because of the early winter. Should be a fun job getting those leaves off the ground now! Nothing like hourly work!
