Apple gourds

Hi everyone. My sister-in-law gave me 5 apple gourd seeds in the spring. I planted them and 3 of them came up. They absolutley went crazy! I have never grown them before and I don't know when I should pick them. They are so beautiful. They look like huge green apples, some of them nearly 10 inches wide. They will make nice birdhouses. So, does anyone know when I should pick them and also how I should cure them out? Thanks.

She does so really nice work woth her gourds, mine do not look so good no matter how many coats of paint they get.
