Norf Dakoter recipe

My ten year old is doing a long project about ND. This involves several required things like history, natural resources etc. She also has to write an essay about or make and bring in a food which is a specialty or regional dish for the state. Both of the books she got at the library mentioned sauerkraut chocolate cake. (Yeeech) A real recipe for this would be appreciated.

German Chocolate Sauerkraut Cake
2 1/4 c. flour
1/2 c. cocoa
1 tsp. bkg. soda
1/4 tsp. salt
Combine above.
2/3 c. soft butter
1 1/2 c. sugar
3 eggs
1 tsp. vanilla
1 c. coffee[can substitute water]
2/3 c. sauerkraut (drained and chopped)
Cream butter, add sugar, eggs, and vanilla. Add liquid and dry ingredients alternately,beginning and ending with dry. Bake at 350 degrees for 25-30min. or until done.

Watch the time closely the first time you try it

SH, believe it or not, it's really good. My wife makes it all the time, and you don't know there's sauerkraut in it. All it does is make it really moist. As soon as she gets home, I'll get it and send it off.
