Does anyone have any good beef or deer jerky recipes. I have tried a few and am having no luck.

Slice the meat in strips approximately 3/4 to 1 inch thick. Roll in a mixture of salt and sugar -half and half. Smoke in a Brinkman or similar outdoor smoker over charcoal fire. Throw in a handful of wet hickory, apple or cherry wood chips a couple times during the approximately 2 hour smoking time. Turn meat half way through. I found that doing it "double decker" lead to burning the lower level, so I use only one grid. Smoke to desired dryness. Time will vary depending on your fire, ambient conditions, etc. I try not to smoke on windy days, or have smoker in sheltered place.

i use hamburger(or whatever), shot of jabanero sauce and plenty of soy sauce. make a tiny batch first and taste it from the microwave. then biggen it :)
