Sugar cane isn't sweet

I have a large patch of green cane growing that I dug out of the glades years ago, and planted it here in plant city fl. The stuff grows better than grass or weeds but the juice is bitter. Cows love it. I piled a lot of tree mulch on it and some lime. Anybody got ideas why it isn't sweet?

Sugar cane does not do well with a high PH, and does not like animal matter either. These things can make cane bitter. Also a dark soil will do the same thing. Remember sugar cane draws the elements around it in to the stalk,be very careful not to use weed killer around it also.
