Rhubarb cake

here's the one i make...

1 1/2 cup brown sugar
2 1/4 cup flour
1/2 cup butter softened
1 egg
1 tsp soda
1 tsp vanilla
1 1/2 cup fresh rhubarb cut up real small.

mix ingredents except rhubarb..after well mixed, add rhubarb & mix good. pour into slightly greased 13x9 pan, sprinkle with 1/4 cup mixtuere of cinnamen and suger. bake at 375 for 35/40 mins.

I then make rhubarb sause. just 2 cups of rhubarb and 1 cup sugar simmer over med heat till resembles apple sause. cool and put onto cake when you eat it. it will make the cake soggy, so i only put it on what we will eat. Sause is good by itself also..hope you enjoy it.

Rhubarb cake up side down

Take one yellow cake mix the one that take oil instead of butter.
Mix as per instructions put in a 9X13" pan,.
sprinkel on top 4 cups chopped Rhubarb.
sprinkel 1cup suger on top.
pour 1/2pt heavy wipping creem on top.
bake untill done. May take a while
