Good morning all....can I subsitute corn flour for white flour in a regular hotcake recipe ? Thanks.

You've probably finished breakfast and lunch by now. Corn flour works great and if your recipe calls for baking powder that will take care of the rising. Otherwise, if you're used to using out of the box pancake flour then you'e going to have to add baking powder or you'll have "flatcakes".

I love cornbread pancakes. Usually make the from a commercial mix. I think you need to include some wheat flour with gluten or the pancakes won't rise and become fluffy.
