Everyone knows that the egg color is determined by the chickens ear color. OK ha ha, but I've heard that there isn't any difference in content. I keep white leghorn hens and always have white eggs.

I get both from my chickens (mixed flock) and virtually everyone I sell to wants the brown.

Here's the logic, as I understand it: Most commercial egg producers with "production line" plants, captive birds that never leave their cages, artificial hormones, lights on 24-7 etc. produce white eggs, because the hybrids that can stand those conditions and lay the best, lay white eggs. These egg factories ship all over the country, and eggs can easily be 2-4 weeks old before you ever see them in the stores.

Conversely, folks that raise their own birds under more traditional home-flock conditions, let them range to supplement their regular feed, and get plenty of fresh air and sunshine tend to raise varieties that produce brown eggs. Frequently these are dual-purpose birds (meat as well as eggs) tend not to be as efficient (more pounds of feed per bird per year) and therefore not cost effective for the big factories. Brown egg producers tend to be local, so the eggs in the store are fresher.

Also, varieties that lay brown eggs tend to lay larger eggs.

If I were to take two eggs out of my coop, one brown and one white, fry 'em up and set 'em in front of ya, I seriously doubt ANYONE could tell me which is which, outside the statistics of random chance.

The women around here prefer brown eggs, saying their yolks are more yellow and produce better homemade noodles! This comes from farmfolk who have been farming all their lives!

Bein from Noo Ingland, I'm used to brown eggs. Can't hardly sell a white one here so nobody hardly tries. I'm told that in Noo Yawk it's just the other way around.
Brown eggs is much prettier. They just look more like eggs. I like them blue and green Araucana ones too. Those are sposta have less cholesterol.

LZ that's my opinion too. I buy all our eggs from an old lady near to me. She keeps a small flok of free range hens, and the eggs realy taste of eggs, and then the nice yellow colour.

The lady always wear a scarf, so one day I asked her if she was a muslim. She replyed, no, it's to awoy chicken manure in my hair :-)))

I have heard there is no difference but I think the blue and green have larger richer yolks and the brown ones set up prettier for sunny side type meals. White decorate better for Easter maybe...

I asked my Dad what the difference was between white and brown eggs many years ago. He told me, as he was breaking eggs into a frying pan, with his customary mischievious twinkle in his eye that white eggs were crunchier than brown eggs. Think about it......
