Use a 3-5 lb duckling, patted dry, put an onion, and apple in cavity, slice skin, insert garlic slivers. Bake on a rack in 350 deg. oven. covered with foil, check every hour, to drain off any excess grease from duck, last 30 minutes leave foil off to brown duck.
