8 ounce can - Fruit Cocktail (1 can)
1/4 cup Butter or Margarine; Softened
1/3 cup Sugar
1 Large Egg
1/4 teaspoon Vanilla
1 1/4 cup Flour; Unbleached
1/4 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 Tablespoon Maraschino Cherry Juice
1/2 cup Flaked Coconut
1/4 cup Maraschino Cherries; chopped
Drain fruit cocktail; reserve 1/3 cup of syrup. Chop fruit cocktail and cherries; set aside. Cream butter and sugar; beat in egg and vanilla. Mix flour, baking powder, baking soda and add 1/4 teaspoon of salt. Mix syrups into flour mixture until mixed well. Stir in fruit cocktail, cherries and coconut.
Spread in greased 9x9x2 inch baking pan.
Bake 350 degrees for 30-35 minutes. Cool
Sprinkle with Powdered Sugar cut into bars. Makes 24 bars
