one red pepper
l roasted chicken (I use the HEB brand)
4 cans chicken broth
4 cans cream of chicken soup
l can rotel tomatoes
l c. frozen whole kernel corn
package of tortilla chips
cheddar cheese, grated, optional
cilantro (fresh) chopped, Optional
Chop the onion and red pepper. Saute.
Debone the chicken and cut into chunks.
Place the above into a large pot with
the chicken broth, chicken soup, rotel
tomatoes and corn.
Heat until bubbly.
Slightly crush tortilla chips ... leave
in larger pieces, not too small. Put into the bottom of a soup bowl. Pour the soup over and top with choices of
avacodo, cheese, cilantro, etc.
