Orange Blossoms
Ingredients:
At a potluck lunch,on the desert near Yuma, AZ., I was treated to these little cakes and found them absolutely delicious...
One yellow cake mix
2 oranges
2 lemons
One and 1/2 pounds of powdered sugar
1 cube melted butter or margarine

Directions:
Prepare cake mix as directed on box.
Bake in small tea cake pans (tiny cupcakes) for 12 minutes in a preheated
350 degree oven.
While still hot and still in tea cake pan, pour over glaze. Lift cakes out of pan with a fork and cool on rack until dry. Makes about 8 dozen.
Glaze- In large bowl put juice from 2 oranges and 2 lemons (about one and 1/2 cups of juice) grate off rind from one orange and one lemon (zest) and add to juice. Add one and 1/2 pounds of powdered sugar, mix well. Add one cube melted butter or margarine and mix well, (again). You will use all your glaze on these cakes.
