Lime Pickles
Ingredients:
7 pounds peeled cucumbers, sliced or chunked (if the cucumbers are large, slice the cucumber down the middle and cut out the seeds, then cut

Directions:
Soak cucumbers for 24 hours in the 2 gallons of water mixed with the 2 cups of lime. Wash well and let stand in cold water for 3 hours. Make brine; sugar, vinegar, salt, mixed spices, and celery seed. Add the cucmbers to the brine. Let stand 12 hours. Then cook the cucumbers in the brine slowly for 35 minutes. Can in sterilized jars.

My grandmother always used one of those glass Delco water jars to soak these pickles in. I now have that jar and use it. This is a favorite family recipe. These pickles have a strong sweet-tart taste.
