Lemonade Pie
Ingredients:
2 readymade graham cracker pie shells
1 envelope unflavored gelatin
1/4 cup cold water
1 can (6 oz)frozen lemonade
concentrate
3/4 cup sugar
1 cup evaporated milk
4 drops red food coloring

Directions:
Soften the gelatin in the cold water. Add lemonade concentrate. Stir constantly over low heat until gelatin dissolves, 3-4 minutes. Stir in sugar until dissolved. Chill until completely cool. Chill evaporated milk in refrigerator tray till ice crystals start to form around edges. Beat cold milk in chilled 1-1/2 qt bowl with electric mixer on high till stiff peaks form. Fold in cooled gelatin mixture and food coloring. Pour into pie crusts and put into freezer till firm, 3-4 hours.Store covered in freezer between servings (gets soft and gooey if left at room temperature)
