Hubbys favorite Mexican Lasagna
1 pd. grd. meat {I use goat meat}
2 tea. cumin
1 Tab. chili pd.
1/2 tea garlic pd.
1 tea red pepper
1 tea salt
2 cups chopped tomatoes canned or fresh.
1 pkg. corn tortillas
2 cups sm. curd cottage cheese
2 cups grated monterey Jack cheese
1/2 cup grated chedder cheese
2 cups lettuce
1/2 cup fresh tomatoes
3 green onions
1/4 cup blk. olives

Brown your meat, drain, add cumin, chili pd., garlic pd., red pepper, salt, tomatoes and heat through.
Cover bottom and sides of a 13 inch x 9 inch x 2 inch baking dish with the corn tortillas, pour meat mixture over tortillas, place a layer of tortillas over meat mixture and set aside.
Combine cottage cheese, Monterery Jack cheese, pour over tortillas, bake at 350* for 30 minutes, remove from oven, serve with chedder cheese, lettuce tomatoes green onions and olives.
{Oh it is so good, hubby loves it.}
