PICKLED BEANS
Ingredients:
GREEN BEANS (PREFER WHITE 1/2 RUNNERS.
PICKLING SALT, SUGAR, VINAGAR AND WATER.

BEANS SHOULD BE FULLY RIPE, EVEN IF SOME HAVE TURNED WHITE/YELLOW AND HAVE TO BE SHELLED OUT.

Directions:
COOK BEANS UNTIL DONE. COOL, PACK IN QUART JARS TO 1 INCH OF TOP. ADD 1 TEASPOON PICKLING SALT, 1 TEASPOON SUGAR, 1 TEASPOON VINIGAR, THEN FILL JAR WITH WELL, SPRING OR BOTTLED WATER.(NO CITY WATER, TOO MANY CHEMICALS) PLACE LID ON JAR, DO NOT TIGHTEN, AND STORE IN DARK PLACE, ON PLASTIC IN CASE JARS RUN OVER. WILL PICKLE IN 14 TO 21 DAY'S.

TO SERVE, HEAT IN IRON SKILLET WITH BACON DRIPPINGS. BEST SERVED WITH FRIED POTATOS AND ONIONS, CORNBREAD AND MILK.
