1 3/4 c. sifted flour (all purpose)
1/4 c. sugar
2 1/2 teasp. fresh baking powder
3/4 teasp. salt (or less)
1 well beaten egg
3/4 c. milk
1/3 c. corn oil Oven 400 deg.
(any salad oil will do, but I find corn
oil just gives better flavor!)
Dry ingredients in bowl; make well in
center. Combine egg, milk, and oil.
Add all at once to dry ingredients. Stir quickly just til dry ingredients are moistened. Fill greased muffin pans
2/3 full or paper lined tins. Bake
400 for 25 minutes. Makes 12
Blueberry Muffins; Prepare batter above. Gently stir in l cup fresh or thawed and 'well-drained' frozen blueberries.
