Have someone remove the belt completly, then start the engine. Even if the water pump is run by the belt it won't hurt it to run for a minute without it. DO NOT RUN TOO LONG OR DRIVE WITHOUT THE BELT. The newer serpentine belts and tensioners can make some mighty strange noises.
Turning on the AC will put extra strain on the crankshaft no doubt but I question it somewhat. Another trick is to pour a slight amount of water on the serpentine belt while the engine is running. Water will noticably change the belt "grip" and tension. This works much better that any belt lube. If the knock goes away with either of these procedures I would doubt a bearing problem.
