You donít know if the animal has a disease, thatís why we cook em. No different than US certified beef, pork or chicken. Thereís always some risk so they say cook it well done. Now, I donít like it well done so I take a little more risk with medium rare. I also process my own venison so they donít mix someone elseís rotten meat in with mine.
