'nother masonry question

OK, I'm just now going to get around to repointing the stonework in my old barn. I've got my tuck point trowel and mortar bag and all that stuff.

I'm really really slow, and plan on just making small amounts of mortar at a time. But I was wondering if I couldn't mix slightly larger amounts and leave it running in the mixer while I'm working with a bucketful at a time? How long can it mix in the mixer before it gets too mixed or too dry or however it spoils?
